Yashica Oliver: The Heart Behind Mattina’s Ristorante 

In Kingman, AZ, a unique collection of restaurants called The Fork in the Road, showcases Desert De Oro Foods’ (DDO) commitment to culinary creativity. This group includes a community favorite, Mattina’s Ristorante. At the center of Mattina’s is Executive Chef and General Manager (GM) Yashica Oliver, whose story is as memorable as the dishes she crafts.

 A Global Perspective 

Born in the Philippines to a Navy family, Yashica’s was raised in places like Japan, Hawaii, Oregon, and California. Her name—Japanese for “prosperous” or “successful”—suits her journey well. She credits travel and cultural exposure with shaping her open-minded, guest-centered approach to leadership:

A Knock that Opened the Right Door

Though she once dreamed of becoming a Navy forensic scientist, life led her to the kitchen—a detour she now sees as destiny. Yashica’s career began at the age of 19,  freshly out of culinary school in Portland, OR. She walked up to Mattina’s, knocked on the door and asked for a job. Starting as a busser in 2007, she quickly worked her way through the kitchen: salads, desserts, grill, sauté and ultimately became head chef. When DDO Foods acquired Mattina’s in 2013, the restaurant expanded its kitchen and adopted a seasonal menu. 

Creating an Experience That Feels Like Home

Set in a 100+ year-old home with a cozy Tuscan vibe, Mattina’s isn’t just about great food—it’s about connection.  The entire restaurant is infused with Yashica’s commitment to, heartfelt hospitality. When a guest joked about wanting a million dollars, she left a stuffed unicorn at his table. Another visitor from Italy said, “This [food] tastes like home.” These are the stories that fuel her passion.

Empowering Her Team

Yashica’s leadership extends beyond the kitchen. She fosters a culture where learning is encouraged and mistakes are met with empathy. “You can’t grow without making a few mistakes,” she says.

She’s proud to have helped many team members, some as young as 19, to grow within the business. Yashica’s focus is not jsut on nurturing talen, but also encouraging belief in oneself.”

Balancing Work, Family, and Big Dreams

At home, Yashica and her husband Charles, a former DDO employee, manage a blended family of six with two dogs, Kira and Ollie, completing the crew. While her schedule is packed, she’s working on finding more time for family and finally visiting the Grand Canyon, something she hasn’t done in 18 years of living in Arizona. Though she once dreamed of becoming a Navy forensic scientist, life led her to the kitchen—a detour she now sees as destiny.
